做法:洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米。用清水把陈皮泡软,拍裂(liè )一小块姜,热(rè )锅,用姜(jiāng )块在锅上(shàng )擦(cā )一(yī )遍,放两勺(sháo )油,待油六(liù )成热下鱼,煎(jiān )至微(wēi )黄。煮沸(fèi )瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调味即可品(pǐn )尝。
