做法:春(chūn )笋(sǔn )切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加(jiā )入少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
