做(zuò )法:春(chūn )笋切成片后(hòu )加少(shǎo )许盐捞出后用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春(chūn )笋,盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
