做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分钟左右(yòu )。再加入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水(shuǐ )快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
