做法:春笋(sǔn )切成片后加少许盐捞(lāo )出(chū )后用清(qīng )水浸泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
