做法:春笋切成(chéng )片后加少许(xǔ )盐捞出后用清水浸(jìn )泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝(háo )油翻(fān )炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
