做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干(gàn )的时(shí )候加(jiā )入(rù )盐,翻炒均匀稍收(shōu )汁(zhī )时盖上锅盖(gài )焖。
