做(zuò )法(fǎ ):春笋切(qiē )成片后加(jiā )少许盐捞出后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春(chūn )笋(sǔn ),盖上锅(guō )盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖(gài )焖。
