做法:春笋切成片后(hòu )加少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片(piàn ),葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量(liàng )清水半(bàn )掩住(zhù )春(chūn )笋,盖(gài )上锅(guō )盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均(jun1 )匀(yún )稍(shāo )收汁时盖上锅(guō )盖焖。
