做(zuò )法:春笋切(qiē )成片后加(jiā )少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干(gàn )的时候加入(rù )盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
