做法:春笋切成片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝(háo )油翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时(shí )盖上(shàng )锅盖焖。
