做法:春笋(sǔn )切成片后加少许盐捞出后(hòu )用清水浸(jìn )泡,生姜切片(piàn ),葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加(jiā )入少量清水半掩(yǎn )住春笋(sǔn ),盖上锅盖(gài )大火煮开(kāi )后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁(zhī )时(shí )盖上(shàng )锅盖焖。
