做法:春笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖(gài )上(shàng )锅盖焖。
