做法:春笋切成(chéng )片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒(chǎo )均匀(yún )稍收汁时盖上锅盖焖。
