做法:洗净宰好鲫鱼,洗(xǐ )净(jìng )淮山和薏(yì )米。用(yòng )清水把陈(chén )皮(pí )泡软,拍裂一小块姜,热(rè )锅,用姜块(kuài )在锅上擦一遍,放两勺(sháo )油(yóu ),待油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半小时(shí ),下盐调味即可品尝。
