做法:春笋切成片(piàn )后加(jiā )少许(xǔ )盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜(jiāng )切片(piàn ),葱切成段。锅烧(shāo )热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖焖。
