做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分(fèn )钟左右。再加入生抽(chōu )、老抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮(zhǔ )到水(shuǐ )快熬(áo )干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
