做法:春(chūn )笋切成片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大火煮开(kāi )后转中火。煮(zhǔ )到水快熬(áo )干的时(shí )候加入盐(yán ),翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
