做法:洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水把陈皮(pí )泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至(zhì )微(wēi )黄。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎(jiān )煮好的鲫鱼和其他材料,武(wǔ )火煮沸,转中(zhōng )小火煲一个(gè )半(bàn )小(xiǎo )时(shí ),下盐调味即(jí )可品尝。
