做法:春笋切(qiē )成片后加(jiā )少许盐捞出(chū )后(hòu )用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住(zhù )春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
