做法:春笋切成片后加少(shǎo )许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋、牛(niú )肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左右。再加(jiā )入(rù )生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
