做法:春笋切成片(piàn )后加少许盐捞(lāo )出(chū )后用(yòng )清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春(chūn )笋,盖上锅(guō )盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
