做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜(jiāng )切片,葱切成(chéng )段(duàn )。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量(liàng )清水(shuǐ )半掩住春(chūn )笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖焖。
