做(zuò )法:春笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切(qiē )成段(duàn )。锅烧热,倒入(rù )2勺(sháo )油(yóu ),放入(rù )生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖焖。
