做法:春笋切成片后加少许(xǔ )盐捞出(chū )后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入(rù )生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右(yòu )。再加入生抽(chōu )、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅(guō )盖(gài )焖。
