做法:春笋(sǔn )切成片(piàn )后加少许(xǔ )盐(yán )捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大火(huǒ )煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时(shí )盖(gài )上锅盖焖。
