做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半(bàn )掩(yǎn )住(zhù )春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
