做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上锅盖(gài )大火煮开(kāi )后转中(zhōng )火。煮到水快熬(áo )干的时候加(jiā )入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅盖焖。
