做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水(shuǐ )快熬(áo )干的时(shí )候加入盐,翻(fān )炒均(jun1 )匀稍收汁时(shí )盖上锅(guō )盖焖。
