做法:春笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开(kāi )后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时(shí )盖(gài )上锅盖焖。
