做法:春笋切成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清(qīng )水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快(kuài )熬干的(de )时候加入(rù )盐,翻炒(chǎo )均匀稍收汁(zhī )时盖(gài )上锅(guō )盖(gài )焖。
