做(zuò )法:春笋切成片(piàn )后加少许(xǔ )盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜切(qiē )片,葱切(qiē )成段。锅烧热(rè ),倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
