做法:春(chūn )笋切成片后加少(shǎo )许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。
