做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖(gài )上(shàng )锅盖(gài )大(dà )火(huǒ )煮开后转(zhuǎn )中(zhōng )火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
