做法(fǎ ):洗净宰好鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一(yī )小块姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲(bāo )一(yī )个半小时,下盐调(diào )味即可品尝(cháng )。
