做法(fǎ ):春笋切成片后加少(shǎo )许盐(yán )捞出后用清(qīng )水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左右。再加(jiā )入生抽(chōu )、老抽、蚝(háo )油(yóu )翻炒(chǎo )均匀,加(jiā )入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖焖。
