做法:春笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再(zài )加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅盖焖。
