做法:春笋切(qiē )成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的(de )时(shí )候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
