做法:洗净宰好鲫鱼,洗净淮(huái )山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜(jiāng )块(kuài )在(zài )锅上擦一遍,放两勺油,待油六成热下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水,放入煎(jiān )煮(zhǔ )好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小(xiǎo )火(huǒ )煲一(yī )个(gè )半小时,下盐调味即可品(pǐn )尝。
