做法:春(chūn )笋(sǔn )切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟(zhōng )左右。再(zài )加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖(mèn )。
