做法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉片、葱(cōng )段翻(fān )炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐(yán ),翻(fān )炒均匀(yún )稍收汁(zhī )时盖上锅盖焖。
