做法:春笋切成片后(hòu )加少许盐捞出后(hòu )用清(qīng )水(shuǐ )浸泡,生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大(dà )火(huǒ )煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
