做(zuò )法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用(yòng )清水把陈(chén )皮泡软,拍裂(liè )一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅(guō )上(shàng )擦一遍,放两(liǎng )勺(sháo )油,待油六成(chéng )热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个(gè )半小时,下盐(yán )调味即可品尝(cháng )。
