做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少量清水半(bàn )掩住(zhù )春笋,盖上锅(guō )盖大(dà )火(huǒ )煮开(kāi )后转中火。煮到水(shuǐ )快熬干(gàn )的时候(hòu )加入盐,翻(fān )炒(chǎo )均匀稍收汁(zhī )时盖上锅盖焖。
