做法:春笋(sǔn )切成片后加少(shǎo )许盐(yán )捞出后用清水浸(jìn )泡(pào ),生姜切片(piàn ),葱切成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉(ròu )片(piàn )、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
