做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖(gài )焖。
