做法:洗净宰好鲫鱼(yú ),洗净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放(fàng )两勺(sháo )油,待(dài )油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小时,下(xià )盐调(diào )味即可品尝(cháng )。
