做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住(zhù )春笋(sǔn ),盖上(shàng )锅盖大火(huǒ )煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
