做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀(yún )稍收(shōu )汁时(shí )盖上锅盖焖。
