做(zuò )法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小(xiǎo )块姜,热(rè )锅,用姜块在锅上擦一遍(biàn ),放两勺油,待油六成热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎煮好的(de )鲫(jì )鱼和其他(tā )材(cái )料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下盐调味即(jí )可品(pǐn )尝。
